●SIMMERED CHICKEN WINGS-----Tebasaki

<Ingredients(for four)>
700g chicken wings
20g sliced ginger
1 teaspoon round sliced red pepper
2 tablespoons salad oil
5 cups water
1 tablespoon sugar
2 tablespoons mirin
4 tablespoons soy sauce
1 clove garlic ( with the skin, broken up into 2- 3
pieces)
1)Heat the oil on a frying pan over medium heat and
brown the surface of
chicken wings. Then place the browned chicken wings
to a pan for simmering.
2)Stir fry the garlic and the ginger on the same frying
pan. Similarly place
the browned garlic and ginger in the pan with the chicken
wings.
3)Add water to the pan and place over high heat. When
it comes to a boil
remove any scum on surface then add the red pepper
slices, mirin, soy
sauce and place the lid firmly. Simmer for 1 hour and
30 minutes over
low heat.
